Your question is not very clear. If you say in your essay, you have been invited to use 3 passes as proof of your thesis, then yes, you need to cite the book. That is what the selection of passages ways.

If you have simply been asked to analyze three passages, especially if they are very long, you do not need to cite in your essay. You simply say "In the first passage selected from" My Summer in Provence ", pages 20-30, the author discusses .... etc.

Yes, I think it is better to cite the quotation marks. I am an English major, and all my teachers prefer quotes. In addition, the text quoted in your essay can help you analyze the word quote by the word. You can break the passage into your analysis.
